Roasted Delicata Fries

Roasted Delicata Fries have the sweet, soft filling of a sweet potato fry and are really simple to prepare. As you might expect, it’s best to serve them hot, right after coming out of the oven.
There’s no need to peel the Delicata squash in this recipe, the skin softens while roasting.
Ingredients (serves 2)
1 large Delicata squash, halved lengthwise and seeded
1 tablespoon olive oil
pinch of salt
Method
Preheat oven to 425° F. Cut each squash half in two widthwise and slice into 1/4″ fries. Lightly oil fries. A Misto oil sprayer is wonderful for roasted fries (just spritz the pan, and then spritz the fries). Lay fries in a single layer on a baking pan. Bake 25-45 min, until lightly browned. Add a sprinkle of salt and serve hot.
